This ensures the preferred crisp crust and soft centre for this cheese bread.

We worked through lots of different flavour combinations during the testing of this recipe. The one that impressed us the most was bread with butter, cheese and garlic. That said, we decided to tone down the garlic a bit to make the finished flavours more pleasing.

Sure, like many of you, we've tried cheese bread made with a wide variety of cheeses. From cheddar and mozzarella to Monterey Jack and Parmesan, each one yields a different result. Yet, we think Gruyère or Swiss cheese work best. Gruyère gets top marks for its rich, nutty flavour but also impressed us with that telltale stringy texture.

Roasted Garlic Cheese Bread

Ingredients

  • 1 French baguette
  • 2 garlic bulbs
  • a drizzle extra virgin olive oil
  • a sprinkle kosher salt and black pepper
  • ¼ cup butter, room temperature
  • 2 tablespoons fresh parsley, chopped
  • 3 cups grated Gruyère or Swiss cheese

Directions

  1. Trim away the top of the bulbs of garlic to expose the tips of the cloves. Place the bulbs onto squares of foil, drizzle with oil and a sprinkle of salt and pepper. Wrap the garlic up tightly in the foil. Transfer to a preheated 425°F oven, roasting it for 45 minutes. Remove the roasted bulbs from the oven and cool completely.
  2. Squeeze the roasted cloves of garlic into a small bowl containing the butter. Add the chopped parsley plus a sprinkle of salt and pepper to taste. Stir until combined.
  3. Cut the baguette in half then divide each half lengthwise. Place the bread on a parchment-lined baking sheet cut sides up. Spread the butter across the bread. Sprinkle with cheese.
  4. Transfer bread to oven placing it under the broiler with the rack in the top position. WATCH CLOSELY! Cook until cheese bubbles and bread gets lightly golden. Remove from oven and cut into smaller pieces. Serve immediately.
